I got a request from Instagram to share more recipes so today I will share the ingredients that are in this delicious chicken salad. This photo is already months old, I took it in the summer & forgot I had it. When I realised, I thought it would be a good idea to post it on the blog: it’s delicious, simple & healthy!
Mind you, if you are vegetarian or eat plant based, you could easily put beans in the salad instead of the chicken, if that’s the case.
This salad consists of chicken, chopped plum tomatoes, avocado, mozzarella & cucumber. Top it with pesto to make it taste better if you’re a fan of pesto- I am!
After preparing the chicken, chop the tomatoes, avocado, cucumber & mozzarella. Blend everything together and you are done!
It couldn’t be more simple than that. Eat & enjoy!
