4 healthy AND yummy snacks

Good morning guys!

Today I thought I’d start off the day by sharing some of my all time favourite snack. All healthy, quick and easy to make not to mention absolutely delicious!

First off will be these cinnamon bun pancakes. All you need is

• 2 dl of oats

• 1 dl of Greek yogurt

• 1 banana

• 1 egg

• Splash of almond milk (regular works absolutely fine as well)

• Cinnamon

Mix the ingredients and fry in a frying pan. As for the sauce, melt some coconut butter using the microwave, add a handful of cinnamon powder and a little bit of honey. DONE!

Next up are these yummy kale chips. Rinse the kale and cut it into smaller piece, leave out the harder middle part. They will shrink a bit in the oven but not too much. Put them on a baking plate over a piece of baking sheet. Add some oil and massage into the kale, sprinkle with salt and put in the oven on 175 Celsius degrees for about 10-15 minutes, depending on your oven. Keep an eye on them while their in there to make sure they don’t get too burnt but perfect crispy.

Then we have the sweet potato fries. Spread the sweet potato on a baking sheet, cut into the size you’d like your fries to be. Season with a bit of oil and salt. It is also very tasty to add some chili, pepper or even cheese. Bake in the oven on 220 Celsius degrees for about 20 Minutes. They should be tender and golden brown. Enjoy!

Lastly, we have a delicious bowl of Greek yoghurt topped with fresh raspberries, blueberries, 1/2 a banana as well as some nuts and chia seeds, sprinkled with a bit of honey.

Easy? Yes! Yummy? Yes! Healthy? Yes!

Let me know if you try any of the recipes above. I promise, you won’t get disappointed.

Take care

Halloumi tacos? Yes please!

Good food = good mood. Isn’t it?

Today I made this really yummy dinner: Halloumi tacos!

I posted pictures of it on my Snapchat (@ moaoaoaoa) and loads of people were asking for the recipe. All you need is halloumi, some tomato salsa, guacamole, tortilla bread and any additional vegetables of your choice.

Firstly, prepare the halloumi. Cut it into cubes and mix it with oregano, pepper flavour and a little bit of chilli flakes.

Prepare the tomato salsa by cutting the tomatoes, some red onion, lime juice and parsley. Add some salt and pepper.

The last thing you should do before frying the halloumi: prepare the guacamole. Since I’m one person I only used one avocado, mixed it with garlic, lime juice and salt and pepper. I also had corn and cucumber with my tacos.

Simple, healthy & takes no time to make!! Enjoy 😘

Chia pudding with almond milk and cardamom

Today I thought I’d share this yummy (& easy!) chia pudding recipe with you. Perfect for breakfast or as an in between class snack. Chia seeds are filled with fibre, iron and rich in antioxidants. With other words, they’re really good for you 😉

  • Almond milk: a bit more than 2dl or 1 cup.
  • Chia seeds: 2 msk or 1/2 cup
  • Honey: however much you’d like
  • Cardamom: didn’t use any measurements this one either
  • Vanilla sugar/powder: same as with cardamom/ honey

Mix all the ingredients mentioned above in an average sized glass, put it in the fridge and leave it overnight.

Serve with berries for an extra boost of vitamins 😊❤

Homemade sweet potato chips recipe

diychipsdiychips1Hey guys!!
Today’s blogpost will be all about these delicious homemade sweet potato chips.

Easy, somewhat healthy and tastes amazing!!

What you need could not be any more simple;

  • 3 sweet potatoes
  • Salt
  • Olive oil
  • Oven: on 200 Celsius degrees
  • 2 baking plates

Start by cutting the potatoes in slices, not too thin though as they’ll decrease drastically when in the oven. Evenly distribute a thin layer of oil over the baking plates and place the potatoes on them.

When they’re all on the baking plates, turn them to the other side so that both sides get some of the oil on them. Then sprinkle the chips with salt, before placing them in the oven.

Now, it’s up to you however long you’ll want to keep them in there. The initial time is 45 minutes but I’d say to add at least 10 minutes to that, depending on your oven. To be on the safe side, make sure you check on them every once in awhile.

And that’s it!!

Easy, huh?

Totally worth trying, I swear- they’re delicious!

Food appreciation post

Can we just take a moment, admiring the food we get for brunch on the weekends? ♥♥

Blueberry Breakfast

This is for everyone that has been asking what I eat for breakfast. Truth is, I cannot stay with the same food for more than a couple of days. Meaning, I what I have for breakfast differ from day to day/ week to week.

However, this is a great tip if you want a super easy, quick, healthy but at the same time sweet breakfast; Porridge with blueberries. If you’d like it even sweater, top it with some honey or agave syrup- I prefer having it more natural though.

This couldn’t be more simple: For one person, take 1 cup of oats, add some salt and mix it all with 2 cups of water. I always prepare my porridge on the stove. When finished, add some frozen blueberries, however big amount you’d like. It will be hot enough for them to somewhat melt/defrost.

Breakfasts like this does not only taste really good, but will also give you long term energy and keep you full longer than a light weight, white, toast would. Top this with banans, nuts or even more berries if you want an even bigger meal.

1 day 3 cities

Switzerland Zurich. Denmark Copenhagen. Sweden Lund. 3 cities in 1 day. Good thing I love traveling as much as I do.

I didn’t wake up too early this morning. Around seven maybe. I realised the second I opened my eyes that the cold I got the other day has really hit me hard. Completely blocked nose, heavy head & a burning throat. Not too fun. Mom, my sister & I had quite a relaxing morning though. Cozy breakfast, some packing after getting ready & then we were good to go. We got to the airport at 10 am. Met up with my grandparents 15 minutes later & were boarding the place two hours after that. I kissed goodbye to my sister & my mom as they were heading to another gate, to go back to Delhi (Pollution time!), while I fly to Sweden with my grandparents.

It wasn’t as funny to come to Sweden, as I thought it would be. I went in to the supermarket, Ica, & heard a bunch of people talking Swedish. First I was like; “Wait, they are Swedish, that’s cool!” Some seconds later, and I realised “Oh right, I’m in Sweden. Everyone is Swedish you stupid human being.” I accidentally walked in to a person and said “I’m so sorry”– in English. Like what? I wasn’t too thrilled seeing the candy and all the delicious Swedish food either. Weird… I even found myself trying to revert the prices into a different currency, before I realized this is actually the swedish krona. Stupid me.

Here comes some nice moments from this weekend.

I am currently in the south of Sweden, in the city where I was born in: Lund. The flight to Denmark from Zurich took 1.5 hours & then it was only a 30 minutes drive until we got here. It’s such a cozy place & I absolutely love my grandparents’ apartment. I stay in a room of my own & will sleep here two night before I spend the weekend with one of my best friends. I miss her lots!

My grandma and I made a really good dinner: salmon & pasta with hollandais sauce and carrots & avocados. Healthy & really tasty. This is a typical dish that we always eat in Sweden. It was so delicious!

I spent the whole evening talking to a close friend of mine. We talked for over 2 hours and it literally felt like 2 minutes. I also went out for a 40 min walk during that time. I’ve missed the feeling of being free & being able to go wherever, whenever. It’s so weird to be in Sweden again, after so many months abroad…

Tomorrow I’ll visit a big shopping mall here, Emporia. I can’t wait!

I hope your day was a good one. I also hope that I will get rid of this annoying cold as soon as possible. I can’t workout when I’m not even able to breath! Well, well… At least my back pain is so much better and when this cold is gone, I will work harder than ever before!
